I still remember who taught me how to cook this yummy ‘Otsumami’, that means something you eat with alcoholic drinks. I was a uni student at the time. We (all girls) were having a casual party and one of my friends brought a plate of this ‘Crispy Abura-agé‘. This is the dish that brings back the memories of my days at uni.

Makes

2 Servings

Ingredients

Abura-agé (Thin Fried Tofu) 2
Miso 1 tablespoon
Mirin 1/2 tablespoon
Spring Onion 1 to 2 *finely chopped
Grated Ginger 1 teaspoon
Sugar 1 teaspoon *optional, add if you like the sauce sweeter

Method
  1. Wrap Abura-agé with paper towel and slightly heat in microwave. Then press it to remove excess oil if required. This process is optional.

  2. Place all other ingredients in a bowl and mix well.

  3. Cut one long end of Abura-agé to open it, spread the Miso and Spring Onion mixture inside.

  4. Heat a frying pan or grill pan, cook until both sides are browned and crispy. Cut into smaller pieces and enjoy with cold Beer, Sake or Shochu!
