‘Mazegohan’ is a Japanese dish of Rice. Rice and other ingredients are cooked separately, and mixed together after they are cooked. This dish looks like a fried rice, but it is not fried. It is easier to cook a large amount for your family, and healthier than fried rice. Add any vegetables you have that are suitable for curry flavoured rice.

Ingredients

2 cups (*180ml cup) Rice
200g Chicken Fillets OR Mince *other Meat can be used
1 clove Garlic *finely chopped
1 small piece Ginger *finely chopped OR grated
1 tablespoon Oil
2 cups chopped Vegetables
*I used Onion, Carrot, Red Capsicum, Beans. Other suggestions include Mushrooms, Cabbage, Peas, Edamame, Corn Kernels, Broccoli Stem, Cauliflower, etc.
1 tablespoon Curry Powder
1 tablespoon Soy Sauce
1 tablespoon Mirin *OR Ketchup is also nice
1 teaspoon Salt *alter the amount to suit your taste
4 Eggs *optional

Method
  1. Wash Rice and cook as normal.
  2. Cut Chicken Fillet (OR other Meat) and all vegetables into small pieces. Heat Oil in a frying pan, cook Vegetables and Chicken.
  3. *Note: Some vegetables can be cooked very quickly. Cook them accordingly. I cooked Onion, Carrot and Beans for a few minutes, then add Chicken and Capsicum. If you add leafy vegetables such as Baby Spinach, add them very last.
  4. Add Curry Powder, Soy Sauce and Mirin, and stir. Add Salt and mix to combine, then add the mixture to the cooked Rice, and mix well. *Note: Today I served it with fried Eggs.
