This salad of Wombok and Chicken can be dressed with any salad dressing of your choice, but this ‘Ponzu’ based simple Sesame Dressing is my favourite. You can’t find Ponzu? Don’t give up to try it because it can be easily substituted with Soy Sauce and Rice Vinegar.


Makes

1 to 2 servings

Ingredients

2 to 3 leaves Wombok *about 150g
1 pinch Salt
1 Spring Onion *finely chopped
100g Cooked Chicken *cut into small bite-size pieces
*Note: Chicken can be boiled, pan-fried OR roasted. It should be Salted.

Sesame Dressing
1/2 to 1 teaspoon Sugar
2 tablespoons Ponzu *OR 1 tablespoon Soy Sauce & 1 tablespoon Rice Vinegar
1 tablespoon Toasted Sesame Seeds *can be lightly ground
1 tablespoon Sesame Oil

Method
  1. Combine all the Sesame Dressing ingredients in a mixing bowl. *Note: You may wish to add Chilli OR Garlic, etc.
  2. Wash Wombok, remove excess water, cut in half lengthways if large, then cut into 1cm wide pieces, add to the Dressing in the mixing bowl, sprinkle with 1 pinch Salt, and mix well.
  3. Add all other ingredients and mix to combine.
