
This is a quick and easy dish that is perfect to enjoy on a hot day. You probably don’t want to cook anything, but just be patient and cook Spaghetti, OR other thin long Pasta. Other than that, you don’t need to cook anything. It’s cool and refreshing, and nutritious.

Ingredients
1 serving (about 80g) Spaghetti *OR other thin long Pasta
Salt for cooking Spaghetti
2 slices (50g) Smoked Salmon *torn into bite-size pieces
3 Mini Roma Tomatoes *OR Grape Tomatoes, Cherry Tomatoes, etc.
Thinly sliced Onion *optional
Dill Leaves *optional
1 handful Mixed Salad Leaves
2 to 3 tablespoons Creamy Salad Dressing of your choice
Salt & Black Pepper
Method
- Cook Spaghetti in boiling salted water according to the instruction on the package. I recommend to cook them rather softly.
- Combine all other ingredients in a mixing bowl (OR a serving bowl if you prefer).
- When Spaghetti are cooked, drain, cool under cold water, and drain well. Add to the bowl, and mix to combine.
- Add some Salt and Black Pepper as required, but be aware Smoked Salmon is very salty. Sprinkle with some extra Black Pepper, and enjoy. *Note: Grated Parmesan can be a good addition as it goes well with most Creamy Salad Dressings.
