
The summer in Japan is severe. Every year I used to lose my appetite because of the heat and humidity, but something acidic always helped me to eat to survive. The vinegared vegetables are something I crave for when I am tired. I quite like strong vinegar flavour of this dish. If you don’t, use less vinegar and add 1 tablespoon sugar for milder flavour.

Ingredients
2 medium Eggplants
2 tablespoons Oil *I used Sunflower Oil
1/4 cup Ponzu *OR 2 tablespoons Soy Sauce & 2 tablespoons Rice Vinegar
1 clove Garlic *grated
1 tablespoon Mirin
1 tablespoon Sugar *optional
Shichimi (Japanese Chilli Spice Mix) OR Chilli *optional
Method
- Cut off the green bit of Eggplants and cut in half or quarter lengthways, then make many shallow cuts on the skin, scoring it. If the pieces are long, cut in half.
- Place Ponzu (Soy Sauce & Vinegar), Mirin and Garlic (and Sugar if you like) in a bowl and mix well to make the sauce.
- Heat Oil in a frying pan over medium heat, cook Eggplants on the skin side down for a few minutes. Then cook other sides as well until they are slightly coloured and almost soft.
- Pour over the sauce, then remove from heat and let cool in the sauce.
- Sprinkle some Shichimi (Japanese Chilli Seasoning) OR Chilli Flakes over and serve.

Dear Hiroko,
I planned on making this dish specifically because Germany has been dealing with record-breaking temperatures in June/July, but it is safe to say that I have found a year-round delicacy with this recipe. My taste-buds are tingling with happiness!
Also, it is a perfect opportunity to test out my newly sharpened knives while scoring the skin. What an absolute joy!

Hi Vanessa. I have heard about the heatwave in Europe in news. Melbourne’s summer can be extremely hot. In January this year, the temperature was above 40℃ several days, and one day it was above 45℃. And we are living in the rented house that has no air conditioner. Preparing dinner in that level of heat is a huge challenge for me. One dish I often prepare is Sushi Rice Bowl.
