When I find apples getting dry and spongy in my fruit bowl, I often make these cupcakes. (Naturally, you can make these cupcakes using fresh Apples!) Because of the plenty of grated apple, these cakes are so moist even after a few days, only if they last that long.
12 Cup Cakes
Apples 3 *peeled and coarsely grated
Self-Raising Flour 1 & 1/3 cups
Cocoa Powder 1/3 cup
Bi-carb Soda 1 teaspoon
Brown Sugar 2/3 cup
Sultanas 1/2 cup or more
Canola Oil 100ml OR Butter 125g *melted
Nuts for topping *optional
- Preheat oven to 180°C. Line a 12-hole muffin pan with cases.
- Combine and shift dry ingredients. Add Eggs, Butter and grated Apples, and mix well. *Note: If you use only 1 or 2 Apples, add some Milk to soften the batter.
- Spoon the mixture into each case and place some chopped/sliced nuts. I used Almond Flakes this time.
- Bake for 20-25 minutes or until cooked through. Leave in tins for 5 minutes before moving onto wire rack to cool.
