
My husband’s aunt Joan told me about her amazing discovery of Asian Fried Noodle Salad. She even gave me a bag of the fried noodles. The recipe was on the package of the noodles, but I found it too sweet. So, I created my own dressing for the salad. I used a bag of ready-to eat coleslaw vegetable mix today. Those vegetable bags are great help when I am very busy.

Ingredients
400g Mix of Coleslaw Vegetables *e.g. Cabbage, Red Cabbage, Carrot, Wombok, Spring Onions, Corn Kernels, etc.
100g Fried Noodles

Dressing Ingredients
2 tablespoons Sugar
4 tablespoons Rice Vinegar
1 tablespoon Soy Sauce
1 tablespoon Sesame Oil
Method
- Combine all the Dressing Ingredients in a small bowl OR jug, and mix well.
- Cut vegetables into thin strips. Mix the vegetables and Fried Noodles in a large serving bowl.
- Just before serve, pour over the dressing, and mix to combine.
