‘Mentsuyu’, Japanese Noodle Dipping Sauce, is a handy sauce to have as it can be used as a seasoning sauce, and it is easy to make. I usually keep a bottle of it in the fridge. However, when it’s run out and I desperately want it for just one serving, I make this Quick & Easy ‘Mentsuyu.’ If you want to make more than 1 serving, see ‘Mentsuyu’ recipe.

Ingredients
50ml Water *3 tablespoons and 1 teaspoon
1/8 teaspoon Dashi Powder *’Katsuo’ (Bonito) type recommended
3 teaspoons (15ml) Soy Sauce
2 teaspoons (10ml) Mirin
Method
- Place all ingredients in a heat-proof bowl, and bring to the boil in the microwave. Allow to cool, then chill in the fridge.
- *Note: When you are in harry, you don’t want to bother boiling it, but you should be aware Mirin is alcoholic. It is your choice to boil Mirin only, then add other ingredients.
