When I cooked Enchiladas for the first time, I bought a popular brand’s Enchilada Dinner Kit. I was totally disappointed with the Enchilada Sauce that was included in the kit. It was like a watery tomato sauce that was slightly seasoned and thickened by corn starch or something. I could have made a better sauce using a can of Tomatoes. This ‘Quick & Easy Enchilada Sauce’ is definitely taste better, and it doesn’t take long to make it.

Ingredients
1/2 Onion *finely chopped
1 clove Garlic *finely chopped
1 tablespoon Olive Oil *OR Oil of your choice
1 can (400g) Diced Tomatoes OR Crushed Tomatoes
1/2 to 1 teaspoon Sugar *optional
Salt & Pepper
*Note: You can add Fresh OR Pickled Jalapeño.
Spices
1 to 2 teaspoons Ground Cumin
1 to 2 teaspoons Ground Coriander Seeds
1 to 2 teaspoons Paprika
2 to 3 teaspoons Dried Oregano
1/4 teaspoon Ground Chilli *optional, alter the amount
Method
- Heat Oil in a saucepan over medium heat, cook Onion and Garlic until soft. Add Spices and mix well.
- Add canned Tomatoes and bring to the boil. Add Sugar if required, and cook until slightly thickens. Season with Salt and Pepper.
