When I cooked Enchiladas for the first time, I bought a popular brand’s Enchilada Dinner Kit. I was totally disappointed with the Enchilada Sauce that was included in the kit. It was like a watery tomato sauce that was slightly seasoned and thickened by corn starch or something. I could have made a better sauce using a can of Tomatoes. This ‘Quick & Easy Enchilada Sauce’ is definitely taste better, and it doesn’t take long to make it.

Ingredients

1/2 Onion *finely chopped
1 clove Garlic *finely chopped
1 tablespoon Olive Oil *OR Oil of your choice
1 can (400g) Diced Tomatoes OR Crushed Tomatoes
1/2 to 1 teaspoon Sugar *optional
Salt & Pepper
*Note: You can add Fresh OR Pickled Jalapeño.

Spices
1 to 2 teaspoons Ground Cumin
1 to 2 teaspoons Ground Coriander Seeds
1 to 2 teaspoons Paprika
2 to 3 teaspoons Dried Oregano
1/4 teaspoon Ground Chilli *optional, alter the amount

Method
  1. Heat Oil in a saucepan over medium heat, cook Onion and Garlic until soft. Add Spices and mix well.
  2. Add canned Tomatoes and bring to the boil. Add Sugar if required, and cook until slightly thickens. Season with Salt and Pepper.
