I often cook meatballs in a soup stock. When the meat mixture is soft, it is easier to drop meatballs, using a spoon, into the boiling stock, rather than roll the meatballs by hands and fry them. It’s a very healthy way to cook. You can enjoy cooked meatballs with your favourite sauce, but I season the stock and enjoy the meatballs with the delicious soup. It’s a good idea to add some vegetables and noodles.

Ingredients

500g Pork Mince
100g Garlic Chives *finely chopped
1 clove Garlic *grated
1 small piece Ginger *grated
1/8 teaspoon Salt
White Pepper as required
1 tablespoon Soy Sauce OR Oyster Sauce *OR 1/2 tablespoon of each
1 Egg
2 tablespoons Potato Starch OR Corn Starch
4 cups Chicken Stock OR Dashi Stock to cook Meatballs *add extra if you are going to add noodles

Method
  1. Combine all ingredients in a mixing bowl very well.
  2. Boil Chicken Stock OR Dashi Stock. Using a large spoon, drop the mixture into the boiling stock and cook until cooked through. Season the soup as you like. *e.g. Salt & White Pepper, Soy Sauce, Oyster Sauce, etc.
  3. Suggestion: Add some Noodles to make this dish a filling meal. The photo below is the same Meatballs in soup with Harusame Noodles (Bean Thread Noodles). I seasoned the soup with Salt, White Pepper, Soy Sauce and Oyster Sauce. I added some Toasted Sesame Seeds and Crispy Chilli Oil on top.
