‘Kinoko’ means mushrooms. Use any Asian mushrooms such as Shiitake, Shimeji, Enoki, Oyster Mushrooms, King Oyster Mushrooms (Eringi) , and plenty of them!


4 Servings


300 to 400g Spaghetti
100g Shiitake *sliced
100g Shimeji *torn into smaller pieces
100g Enoki *torn into smaller pieces
1 Onion *thinly sliced
1 to 2 cloves Garlic *finely chopped
1 tablespoon Oil
100g Bacon
20g Butter
2 to 3 tablespoons Soy Sauce
Freshly Cracked Black Pepper

  1. Cook Spaghetti in a large saucepan of salted boiling water as instructed. Save some water.
  2. Heat Oil in a large frying pan and cook Garlic, Onion and Bacon until the Onion changes colour and Bacon is browned.
  3. Add Mushrooms and cook until tender, then add Butter and some salty water used for cooking Spaghetti. Test the saltiness of the sauce, then add Soy Sauce.
  4. Add cooked Spaghetti and mix well. Sprinkle some Black Pepper over and serve.
