‘Kinoko’ means mushrooms. Use any Asian mushrooms such as Shiitake, Shimeji, Enoki, Oyster Mushrooms, King Oyster Mushrooms (Eringi) , and plenty of them!

Ingredients
300 to 400g Spaghetti
100g Shiitake *sliced
100g Shimeji *torn into smaller pieces
100g Enoki *torn into smaller pieces
1 Onion *thinly sliced
1 to 2 cloves Garlic *finely chopped
1 tablespoon Oil
100g Bacon
20g Butter
2 to 3 tablespoons Soy Sauce
Freshly Cracked Black Pepper
Method
- Cook Spaghetti in a large saucepan of salted boiling water as instructed. Save some water.
- Heat Oil in a large frying pan and cook Garlic, Onion and Bacon until the Onion changes colour and Bacon is browned.
- Add Mushrooms and cook until tender, then add Butter and some salty water used for cooking Spaghetti. Test the saltiness of the sauce, then add Soy Sauce.
- Add cooked Spaghetti and mix well. Sprinkle some Black Pepper over and serve.
