‘Sumiso’ is a Japanese sweet & sour sauce made with Miso. Smooth and mild flavoured Miso such as White Miso is commonly used. It goes very well with boiled Octopus or Squid, and also freshly cooked Konnyaku (Konjac), or Bocconcini. It can be used as a salad dressing. I often add fresh Basil to it. It is a very versatile sauce for many dishes.
Ingredients
2 tablespoons White Miso
1 tablespoon Sugar
1 tablespoon Rice Vinegar
1/2 to 1 teaspoon Hot Japanese Mustard
8 to 10 Basil Leaves
Method
- Combine White Miso, Sugar, Rice Vinegar and Hot Mustard in a small bowl. When Sugar is well dissolved, add finely chopped Basil and mix well.
- *Note: Depending on what to dress with this sauce, alter the amount of Vinegar.
