I used to hate Blue Cheese because of its overwhelming smell, but it is now one of my favourite Cheeses. I particularly love the gooey soft type. If you love Blue Cheese, you must be interested in Blue Cheese Dip. One day I made it using a recipe that I found on the internet. It required Mayonnaise. I didn’t like it because Mayonnaise ruined the distinctive flavour of Blue Cheese. Another recipe required Garlic, and I didn’t like it either. This is how I make Blue Cheese Dip. To enjoy the flavour of Blue Cheese, it has to be very simple.

2 to 3 Servings

Ingredients

50g Blue Cheese *Soft Type OR Hard Type
4 tablespoons (OR more) Unsweetened Greek Yoghurt OR Sour Cream
*Note: Yoghurt makes lighter flavour and Sour Cream makes rich flavour, which is lovely with vegetable sticks, particularly Celery sticks.
Some finely grated Lemon Zest *optional but recommended
Salt & Black Pepper

Method
  1. Place Blue Cheese in a bowl and crumble it if it is a hard type. Add Greek Yoghurt OR Sour Cream, and mix well. Alter the amount depending on the consistency that you are after.
  2. Add Lemon Zest, taste it, and add Salt and Black Pepper as required. *Note: If you are going to serve this dip with salty cracker biscuits, season carefully not to make it too salty.
