‘Mock Zha Cai‘ and ‘Nuta Salad’ are lovely ways to use up Broccoli Stems. Here is another recipe for you to try. This is a Korean inspired Sesame & Garlic flavoured salad. This salad is also really good for drinking.

Ingredients

2 Broccoli Stems *about 150g

1 small clove Garlic *grated
1 pinch Salt *alter the amount to suit your taste
1/4 teaspoon Soy Sauce
1 teaspoon Sesame Oil
1 teaspoon Toasted Sesame Seeds
1/4 to 1/2 Toasted Nori *torn into small pieces
Shichimi (Japanese Chilli Spice Mix) OR Ground Chilli *optional

Method
  1. Combine Garlic, Salt, Soy Sauce, Sesame Oil and Toasted Sesame Seeds in a mixing bowl.
  2. Remove the tough outer parts from Broccoli stems, and thinly slice. Cook in the boiling water for 15 to 20 seconds, drain well, then add to the Garlic & Sesame mixture. Combine well and set aside to cool.
  3. Place Nori on top and sprinkle with Shichimi (Japanese Chilli Spice Mix). Mix to combine when you eat.
