My ‘Gochujang Chicken’ has become very popular and I was cooking it again to make a rice bowl today. Then I remembered a dish that my daughter once cooked for family. The dish tasted very similar to my Gochujang Chicken, and she added Cheese to it. So I added some Cheese, and Spring Onion as well. The result was excellent. You may wish to try this rice bowl.

1 Serving

Ingredients

1 Chicken Thigh Fillet *about 150g
Salt & White Pepper
1 thick Spring Onion
1 teaspoon Sesame Oil
1 handful shredded Cheese *I used Cheese Mix for baking
1 serving warm Cooked Rice

Sauce
1 small clove Garlic *grated
1 small piece Ginger *grated, about 1/2 teaspoon
1/2 tablespoon Soy Sauce
1/2 tablespoon Mirin
1/2 to 1 tablespoon Gochujang (Korean Spicy Miso)
1/2 tablespoon Ketchup
1/4 teaspoon Sugar
1/2 tablespoon Water

Method
  1. Combine all the Sauce ingredients in a small bowl. *Note: Alter the amount of each ingredient to suit your taste. You may wish to add Chilli for extra heat.
  2. Cut Chicken into bite-size pieces and season with Salt & White Pepper very lightly. Cut Spring Onion diagonally into thick slices. Prepare everything before you start cooking.
  3. Heat Sesame Oil in a small frying pan over medium high heat, cook Chicken pieces until nicely browned.
  4. Add thick parts of Spring Onion, stir, then add green parts and the Sauce. Stir to combine, and place shredded Cheese on top in centre, lower the heat, cover with a lid, and cook until Cheese melts.
  5. Half fill a bowl with warm Cooked Rice and cover it with the Chicken mixture, and enjoy.
