My daughter went Cherry Picking with her friend, and came home with 5kg Cherries. What should we do with 5kg Cherries? We love Cherries, but we can’t eat them all while they are fresh. The weather is too hot to bake anything at the moment, so she decided to freeze them after pitted. It’s a hard work. I made Cherry Jam. Still a lot more to go.

Makes

About 200ml

Ingredients

250g Pitted Cherries
1/2 cup (125g) Sugar
*Note: Weigh the pitted Cherries and add Sugar a half of the weight
1 tablespoon Lemon Juice

Method
  1. Wash Cherries, cut in half around the pip, twist them, and remove pips. This is the easiest and quickest way to remove pips.
  2. Place Cherries, Sugar and Lemon Juice in a saucepan, then set aside until juice comes out. If you want to cook straight away, you need to add a small amount Water.
  3. Cook over medium low heat, stirring occasionally, until desired consistency is achieved. *Note: Jam will thicken when it cools.
