I have shared some Yoghurt Ice Cream recipes on this website. This is certainly the easies one. One day, when I had some leftover Yoghurt, whipped Cream and homemade Cherry Jam, I mixed them all together and made a simple dessert for myself, and it was actually really yummy. Today I made them into Ice Cream. It was absolutely quick and easy.

Ingredients

1/2 cup Thickened Cream
1/2 cup Unsweetened Greek Yoghurt
1/2 cup Cherry Jam OR Cherry Jam made with Canned Cherries *you can add more, read ‘Method 2’

Method
  1. Beat Thickened Cream until firm peaks form.
  2. In a separate bowl, mix Unsweetened Greek Yoghurt and Cherry Jam. *Note: Some store-bought Cherry Jams are very sweet. If the mixture is too sweet, add extra Yoghurt, and increase the amount of Cream as well.
  3. Fold in whipped Cream to the Yoghurt mixture, and mix to combine.
  4. Pour the mixture into a container. Freeze for a few hours until firm. *Note: To soften completely frozen Ice Cream, transfer from the freezer to the fridge 20 minutes before serving, OR leave it at room temperature for 10 minutes.
