I have shared some Yoghurt Ice Cream recipes on this website. This is certainly the easies one. One day, when I had some leftover Yoghurt, whipped Cream and homemade Cherry Jam, I mixed them all together and made a simple dessert for myself, and it was actually really yummy. Today I made them into Ice Cream. It was absolutely quick and easy.

Ingredients
1/2 cup Thickened Cream
1/2 cup Unsweetened Greek Yoghurt
1/2 cup Cherry Jam OR Cherry Jam made with Canned Cherries *you can add more, read ‘Method 2’
Method
- Beat Thickened Cream until firm peaks form.
- In a separate bowl, mix Unsweetened Greek Yoghurt and Cherry Jam. *Note: Some store-bought Cherry Jams are very sweet. If the mixture is too sweet, add extra Yoghurt, and increase the amount of Cream as well.
- Fold in whipped Cream to the Yoghurt mixture, and mix to combine.
- Pour the mixture into a container. Freeze for a few hours until firm. *Note: To soften completely frozen Ice Cream, transfer from the freezer to the fridge 20 minutes before serving, OR leave it at room temperature for 10 minutes.
