
‘Chikuwa’ is a Japanese tubular fish cake. Chikuwa and Cucumber are the great combination, and there are many ways to enjoy them together. Today I made them into this simple salad. You can season this salad with anything, but today I used Sesame Oil and Sesame Seeds with Garlic and Chilli. It is very simple, yet delicious.

Ingredients
1 Continental Cucumber *about 260g
1/4 teaspoon Salt
160g Chikuwa (Japanese Tube-shape Fish Cakes)
1 clove Garlic *grated
1 tablespoon Sesame Oil
1/2 tablespoon Toasted Sesame Seeds *lightly ground
1 teaspoon Soy Sauce
Chilli Flakes as required *OR Toban Djan (Chilli Bean Sauce), Crispy Chilli Oil, etc.
Method
- Cut Cucumber in half lengthways, then diagonally cut into 2-3mm thick slices. Place in a mixing bowl, add Salt, and mix to combine.
- Cut Chikuwa diagonally into 3-4mm thick slices and add to the bowl. Add all other ingredients and mix well.
