It all started when I first fried Nori to use up leftover Tempura batter. Nori Tempura turned much crispier than I expected, and it brought back a memory of a childhood snack. I altered the batter to achieve the right texture and I added Katsuobushi (Bonito Flakes) to it. These ‘Crispy Fried Nori’ are really yummy and perfect for snacking or DRINKING!

Ingredients
1/4 cup Plain Flour *You can use ‘Tempura’ Flour if you have it.
1/4 teaspoon Salt
Ground Chilli as required *optional
1/4 cup Cold Water
1 sachet (2.5g) Katsuobushi (Bonito Flakes) *finely crumbed
1 & 1/2 sheets Nori
Oil for frying
Method
- Mix Plain Flour, Salt and Water in a bowl. Add Katsuobushi and mix well. *Note: You may wish to add some Ground Chilli for spiciness.
- Cut a Nori sheet into 16 pieces. Each piece would be about 5cm. You would need about 1 & 1/2 sheets. Thinly coat coarse side of each piece with the batter and fry in a generous amount Oil in a frying pan over medium heat, the battered side down first.
- When it is crispy, turn over and cook Nori only side as well. Turn over again, and fry until both sides are totally crispy and the batter is nicely browned.
- Transfer to paper towel to drain the excess oil.

I can’t answer your question, Nikki. I do not know anything about air fryer. Cooking process involves batter, I think frying in a reasonable amount of oil would be the best.
