This salad is identical to my ‘Cucumber & Avocado Yoghurt Salad’. I replaced Avocado with Celery, and altered the Salt. This salad is quick and easy to make, and it is a perfect side dish for BBQ.

Ingredients

1 large Continental Cucumber *about 280g
2 stalks Calery
1/4 teaspoon Salt
Dill for topping *optional

Yoghurt Sauce
1/2 cup Unsweetened Greek Yoghurt
1 pinch (1/8 teaspoon) Salt
1/4 teaspoon Sugar *optional
1 clove Garlic *grated
1 tablespoon Olive Oil
1-2 tablespoons chopped Dill
Black Pepper

Method
  1. Cut Cucumber in half lengthways, cut diagonally into into 4-5mm thick slices. Cut Celery diagonally into into 4-5mm thick slices. Add Salt and combine, and set aside while you are making Yoghurt Sauce.
  2. Combine all the Yoghurt Sauce ingredients in a small bowl.
  3. Discard salty water from Cucumber and Celery if there is any. Add the Sauce to Cucumber and Celery, gently mix to combine, and serve immediately. *Note: I added extra Black Pepper and some Dill leaves on top.
