
One day I added fresh Cucumber and Avocado to leftover Tzatziki (Yoghurt & Cucumber Dip), and that was the beginning of this salad. You don’t need Tzatziki. You need the same ingredients to make Tzatziki, and combine them in a different way. This salad is absolutely quick and easy to make. I recommend to cut Cucumber into chunky bite-size pieces, so that water won’t come out too quickly. This is a perfect salad for BBQ.

Ingredients
1 large Continental Cucumber *about 250g
1 pinch (OR 1/8 teaspoon) Salt
1 Avocado *cut into bite-size pieces
Yoghurt Sauce
1/2 cup Unsweetened Greek Yoghurt
1/4 teaspoon Salt
1/4 teaspoon Sugar
1 clove Garlic *grated
1 tablespoon Olive Oil
1-2 tablespoons Dill OR Mint *coarsely chopped
Black Pepper
Method
- Cut Cucumber into chunky bite-size pieces, add Salt and combine, and set aside while you are making Yoghurt Sauce.
- Combine all the Yoghurt Sauce ingredients in a small bowl.
- Discard salty water from Cucumber if there is any. Add the sauce and Avocado to Cucumber, gently mix to combine, and serve immediately. *Note: I added extra Black Pepper and some Dill leaves on top.
