This dish looks like Fried Rice, but it is ‘Mazegohan’, a Japanese Rice dish. Rice and other ingredients are cooked separately and mixed together. It’s much easier than cooking Fried Rice, and you won’t need a lot of Oil. Today I added Chicken Thigh Fillets. Pork is also nice. I haven’t tried this dish with other meat, but Beef and Lamb should work.

Ingredients

2 cups (*180ml cup) Rice of your choice
1 tablespoon Butter OR Oil
1 Onion *finely chopped
1 clove Garlic
250g Chicken OR Pork *cut into small OR bite-size pieces
100 to 150g Asparagus *trimmed and cut into small pieces
1 to 2 tablespoons Curry Powder *1 tablespoon is mild
1/2 teaspoon Salt *you need extra if you don’t use Soy Sauce
1 to 2 teaspoons Soy Sauce *optional
Black Pepper
4 Eggs *optional

Method
  1. Wash Rice and cook as normal. *Note: You can cook Rice in Stock, such as Chicken Stock, instead of Water.
  2. Heat Butter (OR Oil) in a frying pan, cook Onion, Garlic and Chicken (OR other Meat). When colour is changed, add Asparagus and stir.
  3. When Asparagus is cooked, add Curry Powder, Salt and Soy Sauce (*optional). You may wish to add ground Black Pepper as well. *Note: You might find the mixture is too salty and over-seasoned, but it needs to be seasoned strongly as it will be mixed with Rice.
  4. Add the mixture to cooked Rice and mix to combine. Today I added fried Egg on top to serve.
