Today I found Kransky Sausages in the fridge. There are many options that I can cook with them, but I always prefer cooking them in curry flavour. ‘Curry Flavoured Smoked Sausage & Potato Salad’ is the dish that I cook with Kransky most frequently. Today I made a soup, but it turned not quite soupy. I ate it with Bread, and my son enjoyed it with Rice. As it was so delicious, I decided to write down how I cooked it.


Makes

3 to 4 Servings

Ingredients

1 tablespoon Oil *I used Canola Oil
1 Onion *cut into small pieces
250g Smoked Sausages *I used Kransky Sausages
1 clove Garlic *finely chopped
1 tablespoon Curry Powder
1 tablespoon Plain Flour
2 cups Chicken Stock OR Vegetable Stock
1 can (400g) Chickpeas *drained
Salt & Black Pepper
1 head Broccoli *cut into small florets

Method
  1. Heat Oil in a pot, cook Onion and Sausages for a few minutes, slightly brown, then add Garlic and stir.
  2. Add Curry Powder and Flour, stir, and add Chicken Stock (OR Vegetable Stock). Simmer for a few minutes, then add drained Chickpeas. Simmer for 5 minutes.
  3. Taste the soup and season with Salt & Black Pepper. Add Broccoli pieces, stir to combine, and simmer until Broccoli is cooked. *Note: You should be careful with the amount of Salt because saltiness should have come out from Sausages.
  4. You may wish to enjoy it with Rice, Couscous OR Bread.
