Four_Beans_Salad

This is my favourite salad and it’s ‘Super Easy’ to make. I sometimes feel craving for it. That’s why I always stock some tins of four beans in my pantry. Other essential ingredients are fresh crunchy Carrot and Cucumber, and Japanese Mayonnaise. This can be a great side dish, but it also can be a great lunch itself.


Makes

2 to 4 Servings

Ingredients

1 can (400g) Four Beans (Mixed Beans)
1-2 Cucumbers
1 Carrot
Salt
4 leaves (OR more) Cos Lettuce
1 to 2 thick slices Ham *optional
3 to 4 tablespoons Japanese Mayonnaise
1/2 to 1 tablespoon Soy Sauce

Method
  1. Cut all Vegetables and Ham into small similar size pieces.
  2. Place Cucumber and Carrot in a mixing bowl, sprinkle a pinch of Salt and mix. Add Cos Lettuce and Ham. Drain Four Beans, rinse, drain well to remove water, and add to the mixing bowl.
  3. Add Japanese Mayonnaise and Soy Sauce, and mix to combine.
