It was before our first child was born. My husband and I tried to make this dessert for the first time. We ended up by burning the dumplings. We tried again and again, but we always burned the dumplings. Now I know that we were doing OK but the recipe was wrong!
This dessert is easy to make but also easy to burn. What you need is a reasonable amount of sauce. And you should make the dumplings rather small to reduce cooking time so that they won’t burn. *Note: I use my ‘Lorna’s Scones’ recipe to make dumplings.

Ingredients
1 & 1/2 cups Self-Raising Flour
40g Butter *chopped
1/2 cup Milk *you might need extra 1 tablespoon
Ice-cream or Thickened Cream to serve
Sauce Ingredients
1 & 1/2 cup Boiling Water
1/2 cup Brown Sugar
1/2 cup Golden Syrup
20g Butter
1-2 teaspoons Lemon Juice
Method
- Use your fingertips to rub in Butter pieces into Self-Raising Flour until the mixture resembles fine breadcrumbs. Add Milk and stir until just combined and smooth. Roll the mixture into 16 balls.
- Combine all the sauce ingredients in a large saucepan or pot. Heat over medium heat, stirring, until the Sugar dissolves and the mixture comes to simmer.
- Carefully place dumplings to the sauce in a single layer. Cover and cook for 15 minutes, occasionally shaking the pan, until the dumplings are cooked through.
- Serve with ice-cream or thickened/double cream.
