‘Harusame Salad’ is one of my family’s favourite summer dishes. I have been making the same ‘Harusame Salad’ for decades. This summer, I created a new version with Thai dressing, that has a nice flavour with citrus juice. The salad is so refreshing and definitely another summer favourite for us.


Makes

2 to 3 Servings

Ingredients

100g Harusame Noodles (Bean Thread Noodles)
100g Pork *thinly sliced
6 Prawns
150 to 200g Salad Vegetables *thinly sliced into strips
*This time I used Cucumber, Lettuce, Capsicum, Cherry Tomatoes, Carrot, Red Onion and Coriander.
2 Spring Onions *finely chopped
Coriander Leaves for garnish *optional

Dressing Ingredients
2 tablespoons Lime / Lemon Juice
2 tablespoons Fish Sauce
1 tablespoon Brown Sugar
1 teaspoons Chilli Garlic Sauce *Or Fresh Garlic & Chilli

Method
  1. Combine all the dressing ingredients in a small bowl.
  2. Cook Harusame Noodles as instructed. Basically cook in boiling water until turns transparent. Rinse in cold water and drain well. Cut about 5-10cm.
  3. Cook Pork and Prawns in a frying pan. No seasoning is required. *Note: They can be boiled with Harusame Noodles if you like.
  4. Place everything into a large mixing bowl, add the dressing and mix to combine well. Sprinkle with finely chopped Spring Onions and serve immediately.
