When you crave a piece of Carrot Cake, you can make this Carrot Cake in a coffee cup in less than 5 minutes, only if you have a Carrot and, most importantly, a microwave. The hardest part is grating a Carrot, I suppose. No Egg is needed, but you can use Egg instead of Milk.

Ingredients

1 small Carrot *grated (about heaped 1/4 cup)
1 tablespoon (15g) Butter
1 tablespoon Sugar
1 tablespoon Sultanas OR Raisins
4 tablespoons Self-Raising Flour *if you use Plain Flour, add 1/4 teaspoon Baking Powder
3 tablespoons Milk *OR 1 Egg if you prefer
Ground Cinnamon as required

Method
  1. Grate 1 small Carrot into a coffee cup. Add Butter and microwave for 1 minutes. This cooking process will make the grated Carrot sweet.
  2. Add all other ingredients and mix well. Cover with a small plate and cook for 1 minute or until cooked. Sprinkle with extra Cinnamon and enjoy. *Note: I used 1100W microwave.
