Last night, I really wanted to eat a lemony sweet. But I was too tired to make anything. Then, I decided to make ‘Instant Mug Cake’ that is super quick and easy. I poured a mixture of Lemon Juice and Sugar over it. It didn’t take 5 minutes to make it. But this lemony mug cake satisfied my craving. I made it again today. I used a lot of Sugar for one mug cake, but I needed it because of the sourness of Lemon.
Makes
1 Serving *I used 380ml mug
Ingredients
1 tablespoon Butter *1 tablespoon is 15ml
2 tablespoons Caster Sugar
1 Egg
4 tablespoons Self-Raising Flour
*Note: You can add some finely grated Lemon Zest
Lemon Syrup
1-2 tablespoons Lemon Juice
1-2 tablespoons Caster Sugar
Method
- In a small bowl, combine Lemon Juice and Caster Sugar.
- Place Butter in a mug, microwave for 20-30 seconds OR until Butter melts. Add Sugar and mix well.
- Add Egg and mix well, then add Flour and mix well until smooth.
- Microwave for 1 to 1 & 1/2 minutes OR until cooked. Gently pour Lemon Syrup over the hot cake and wait for a few minutes, and enjoy.
