Just like Bread Loaf can be baked in a tin or on a tray, Meatloaf can be baked in a tin or on a tray. Free-form Meatloaf is quick and easy to bake. Place some Potatoes around it and bake all together. You may wish to add other Vegetables such as Carrot. While they are baking in the oven, you can make Yoghurt Sauce to go with Lamb Meatloaf. This super easy dish would look great on your dinner table.

Ingredients

Lamb Meatloaf
500g Lamb Mince
1 Onion *finely chopped
1 clove Garlic *finely chopped
1/2 cup Breadcrumbs
1 Egg
2 teaspoons Dry Mixed Herbs
1/2 teaspoon Salt
1/4 teaspoon Ground Black Pepper
50g Fetta Cheese *coarsely crumbled
*Note: You can add some fresh Herbs such as Parsley

Roast Potatoes
4 medium size Potatoes *Today they weighed 500g
1-2 teaspoon Olive Oil
1 clove Garlic *grated
Salt & Black Pepper
*Note: You may wish to add other Vegetables such as Carrot, Zucchini, Capsicum, etc.

Yoghurt Sauce
1/2 cup Greek Style Yoghurt
1 clove Garlic *grated
1-2 teaspoons Olive Oil
1-2 teaspoons Lemon Juice *optional
Salt & Black Pepper to taste

Method
  1. Preheat oven to 220℃. Line a large baking tray with baking paper.
  2. Place all Lamb Meatloaf ingredients into a large mixing bowl and mix to combine. Form into a loaf and place on the prepared tray.
  3. Peel Potatoes and cut into 3cm size pieces. Today I cut the medium size Potato into 8 pieces. Coat with Oil and Garlic, and season with Salt & Black Pepper. *Note: If Potato pieces are too large, it takes longer time to cook and they won’t be ready when the Meatloaf is cooked.
  4. *Note: If you add other Vegetables, remember some Vegetables can be cooked quickly, OR takes longer time to cook. You need to add them to the tray accordingly.
  5. Bake for 30 to 35 minutes OR until cooked through and nicely browned. While they are baking in the oven, combine all the Yoghurt Sauce ingredients and serve with the sauce.
  6. *Note: Depending on the quality of meat, lots of liquid might come out from the Meatloaf. If liquid is trapped on top of the Meatloaf and it stops browning, you may wish to remove the liquid.
