My next-door neighbour old couple is so kind and they share their garden harvest with us. Recently they gave us many Limes, which were ripe and yellow. To be honest, I don’t use Limes for cooking very often. I decided to make a preserve. I simply packed a jar with Lime slices and Sugar. A lot of juice came out and lovely syrup was produced. I added some of these sweet Lime slices to Soda Water, and it was a beautiful drink. You may wish to add Vodka, Tequila or other spirits as well.


Ingredients

Limes
Sugar
*Note: Use about the same weight of Limes and Sugar, but the amount of Sugar can be reduced. Today I used 3 Limes which weighed 200g, so I added 200g Sugar.

Method
  1. Wash Limes very well, dry with a tea towel, then thinly slice them.
  2. In a sterilised jar, place Lime and Sugar in layers, and cover the top with Sugar. Close with a clean lid, and set aside in a cool place for 1-2 weeks before you start enjoying.
