I needed to clean up my fridge completely. I had a little bit of Yoghurt, Condensed Milk and Thickened Cream. I decided to mix them together and make Ice Cream. I didn’t have Lemon but I had 1 Lime. I added its juice and zest as well. Result was a unique flavoured Ice Cream.

Ingredients

1/2 cup Greek Yoghurt
1/2 cup Condensed Milk *could be reduced, e.g.100ml
Juice of 1 Lime *about 2 tablespoons
Zest of 1 Lime *finely grated
1/2 cup Thickened Cream *firmly whipped

Method
  1. Combine Greek Yoghurt, Condensed Milk, Juice and Zest of Lime in a mixing bowl.
  2. In a separate mixing bowl, beat Thickened Cream firmly, fold into the Yoghurt mixture and combine well.
  3. Pour the mixture into a container. Freeze for a few hours until firm. *Note: To soften completely frozen Ice Cream, transfer from the freezer to the fridge 20 minutes before serving, OR leave it at room temperature for 10 minutes.
