This Red Cabbage Salad can be a great side dish for your BBQ, OR you can use it for your Tacos. I don’t know if this is truely Mexican, but I always use Cumin, Coriander, Chilli and Oregano to season Mexican flavoured dishes. So, I added them to this salad. The flavour is Mexican to me.

Ingredients

1/8 Red Cabbage *250 to 300g
1 small Carrot
1/4 Red Onion
Coriander *optional

Dressing
1 clove Garlic *grated
1 tablespoon Juice of Lime OR Lemon
1 tablespoon Olive Oil
1/4 teaspoon Salt
1/2 teaspoon Ground Cumin
1/2 teaspoon Ground Coriander Seeds
1/4 teaspoon Ground Chilli
1 to 2 teaspoons Dried Oregano

Method
  1. Combine the Dressing ingredients in a mixing bowl. The amount of each Ingredient is just a suggestion. Alter the amount to suit your taste.
  2. Thinly slice Red Cabbage and Red Onion. Cut Carrot into thin strips. If you add Coriander, roughly chop up. Add all vegetables to the mixing bowl, and mix well to combine.
