There is a condiment called ‘Yuzukosho’ in Japan. It is made with zest of Yuzu, Japanese Green Chilli and Salt. Fresh Yuzu and Japanese Green Chilli are impossible to find where I live. I have been growing a Yuzu tree, but I don’t know when I can harvest any fruit. Here is a substitute for ‘Yuzukosho’ and it’s ‘Lime & Jalapeño’. It’s great with meat, fish, seafood, avocado and many other things.
Zest of 1 Lime *finely grated
1 to 2 Jalapeño *finely minced
1/4 to 1/2 teaspoon Salt
- Combine all ingredients well. Alter the amount of Salt to suit your taste. This condiment tastes better next day.
