When I had just 1 Jalapeño and didn’t know what to use it for, I chopped it up and added to my Miso Sauce. I decided to use the Miso Sauce for cucumber salad, so I added Vinegar and some Peanuts. A little bit of Garlic as well. Then I added Pickled Jalapeño. The Miso Sauce turned to a delicious dip. We ate a lot of Cucumber sticks with it. What an accidental invention!

Ingredients

1 Jalapeño *finely chopped
1 clove Garlic *finely chopped
1 teaspoon Sesame Oil
2 tablespoons Miso
2 tablespoons Mirin
1 teaspoon Sugar
1/4 cup Roasted Unsalted Peanuts *ground
1/2 to 1 tablespoon Vinegar *OR Marinade from Pickled Jalapeño
1 to 2 tablespoons finely chopped Pickled Jalapeño *optional, but highly recommended!

Method
  1. Place finely chopped Jalapeño and Garlic in a heat-proof bowl, add Oil, and cook in the microwave for 1 minutes.
  2. Add Miso, Mirin and Sugar, and mix well. Cook in the microwave for 30 to 60 seconds.
  3. Add ground Roasted Unsalted Peanuts, finely chopped Pickled Jalapeño and Vinegar (OR Marinade from Pickled Jalapeño), and mix well.
  4. Enjoy with Cucumber, Capsicum, Celery, OR other juicy vegetable sticks.
