When I had just 1 Jalapeño and didn’t know what to use it for, I chopped it up and added to my Miso Sauce. I decided to use the Miso Sauce for cucumber salad, so I added Vinegar and some Peanuts. A little bit of Garlic as well. Then I added Pickled Jalapeño. The Miso Sauce turned to a delicious dip. We ate a lot of Cucumber sticks with it. What an accidental invention!

Ingredients
1 Jalapeño *finely chopped
1 clove Garlic *finely chopped
1 teaspoon Sesame Oil
2 tablespoons Miso
2 tablespoons Mirin
1 teaspoon Sugar
1/4 cup Roasted Unsalted Peanuts *ground
1/2 to 1 tablespoon Vinegar *OR Marinade from Pickled Jalapeño
1 to 2 tablespoons finely chopped Pickled Jalapeño *optional, but highly recommended!
Method
- Place finely chopped Jalapeño and Garlic in a heat-proof bowl, add Oil, and cook in the microwave for 1 minutes.
- Add Miso, Mirin and Sugar, and mix well. Cook in the microwave for 30 to 60 seconds.
- Add ground Roasted Unsalted Peanuts, finely chopped Pickled Jalapeño and Vinegar (OR Marinade from Pickled Jalapeño), and mix well.
- Enjoy with Cucumber, Capsicum, Celery, OR other juicy vegetable sticks.
