In Australia, Chipolatas are small Pork OR Beef Sausages. I first made this dish when I saw a dish made with Chipolatas and Canned Baked Beans. I don’t like Canned Baked Beans, so I used Canned Cannnellini Beans and Tomatoes. This is a quick & easy family dish for a busy person. This kind of dish was a life saver when my children were young and I was terribly busy all the time. Please note that you can make the Tomato Sauce Italian OR Indian OR whatever. Use your favourite spices and herbs.

Ingredients

500g Chipolatas *small uncooked sausages
1 tablespoon Oil *I used Olive Oil
1 Onion *thinly sliced
1 clove Garlic *finely chopped OR sliced
2 teaspoon Dried Oregano
1 teaspoon Ground Cumin
1 teaspoon Ground Coriander Seeds
Ground Chilli *optional, as required
1 can (400g) Tomatoes
1 cup Chicken Stock *OR Stock of your choice
1 Jalapeño Pepper *optional, sliced, Pickled Jalapeño is OK
Salt
1 can (420g) Cannellini Beans *drained
Parsley OR Coriander

Method
  1. Heat Oil in a large frying pan over medium heat and cook Chipolatas. When nicely browned, but not cooked through, transfer to a plate. Add Onion and Garlic to the pan, and stir.
  2. When Onion is soft, add Spices and Herbs, then add Tomatoes and Chicken Stock (OR Stock of your choice). Season lightly with Salt, return Chipolatas, add Jalapeño (if you add it) and drained Cannellini Beans, and bring back to the simmer.
  3. Simmer for 10 to 15 minutes. Sprinkle with some chopped Parsley OR Coriander, and serve with Potato, Bread OR Rice.
