‘Shakshuka’ has become so popular and I don’t need to explain what it is, but it is a North African and Middle Eastern dish of Eggs cooked in Tomato based sauce. It is easy to cook and you don’t need to spend a lot of money at restaurants. This recipe is for 1 serving. It would be easy to multiply the recipe to cook more than 2 servings.


Makes

1 Serving *I used 20cm frying pan

Ingredients

1/2 tablespoon Olive Oil
1/4 Onion *finely chopped OR cut into small pieces
1/4 Red Capsicum *finely chopped OR cut into small pieces
1 clove Garlic *finely chopped
1/2 teaspoon Paprika
1/4 teaspoon Cumin
Ground Chilli as required
1/2 can Diced Tomatoes OR Whole Tomatoes *about 200g, OR diced Fresh Tomato
Salt and Pepper to taste *I added 1/4 teaspoon Salt
1 to 2 Eggs
Chopped Coriander OR Parsley
*Note: You can add Bacon, OR other vegetables such as Carrot. A small amount of Sugar can improve the flavour depending on the sourness of the Tomatoes.

Method
  1. Leave the Egg(s) at room temperature, so that Egg(s) will be cooked more quickly.
  2. Cut all vegetables finely OR into small pieces. You can thinly slice them if you prefer.
  3. Heat Olive Oil in a frying pan over medium heat, cook vegetables until soft and slightly caramelised. Add the spices and stir.
  4. Add Tomatoes and bring to the simmer stirring occasionally. Season with Salt & Pepper, and mix well. Add Egg(s), cover with a lid if you want to do so, and simmer until the Egg(s) are very softly cooked.
  5. Sprinkle with some chopped Coriander OR Parsley, some extra Pepper, and enjoy with nice crusty bread.
