This is a lovely summer treat, which can be made with just 1 can of Lychees in Syrup. Blend the the content of the can of Lychees into smooth puree, add a little bit of Lemon Juice and Sugar if you like, freeze it until icy, then use a fork to break up into crystals. It’s super easy to make and absolutely lovely on a hot summer day.

Ingredients

1 can (560g) Lychees in Syrup
1 tablespoon Sugar *plus extra if required
1 teaspoon Lemon Juice *plus extra if required
Frozen Lychees for presentation *optional

Method
  1. Place the content of the can of Lychees in a jug and use a stick blender to blend until smooth. This process can be done using a different type of blender.
  2. Taste it, and add Sugar OR Lemon Juice if required, and blend again. Today I added 1 tablespoon Sugar and 1 teaspoon Lemon Juice.
  3. Pour the mixture into a container and leave in the freezer until icy.
  4. Use a fork to break up into crystals. You may wish to enjoy it with ice cream, but it is quite nice as it is. *Note: I added frozen Lychee for presentation.
