When we have Tacos dinner, I cook this ‘Mexican Chicken’ which is my family’s favourite filling. I serve it with Tortillas and plenty of fresh Vegetables. Mexican Tacos is always a popular dinner menu for my family. I sprinkled with chopped Parsley, but Coriander would be more Mexican. I couldn’t use Coriander because my husband hates it.
500 to 600g Chicken Thigh Fillets
Oil for cooking
1 teaspoon Salt
1/2 teaspoon Garlic Powder *OR ground 1 clove Garlic
1/2 teaspoon Onion Powder
1/4 to 1/2 teaspoon Ground Chilli
1/2 teaspoon Ground Paprika
1/2 teaspoon Ground Cumin
1/2 teaspoon Ground Coriander Seeds
1 teaspoon Dried Oregano
- Combine all the Spice Mix ingredients, sprinkle it over Chicken Fillets, coat them all over, and set aside for 15 minutes.
- Cook Chicken Fillets on a hot grill pan or frying pan.
- For Tacos, cut them into strips and serve with Tortillas and fresh Vegetables such as Lettuce, Red Onion, Capsicum, Tomatoes, Avocado, Cucumber, Pickled Jalapeño, etc.
