When we have Tacos dinner, I cook this ‘Mexican Chicken’ which is my family’s favourite filling. I serve it with Tortillas and plenty of fresh Vegetables. Mexican Tacos is always a popular dinner menu for my family. I sprinkled with chopped Parsley, but Coriander would be more Mexican. I couldn’t use Coriander because my husband hates it.

500 to 600g Chicken Thigh Fillets
Oil for cooking

Spice Mix
1 teaspoon Salt
1/2 teaspoon Garlic Powder *OR ground 1 clove Garlic
1/2 teaspoon Onion Powder
1/4 to 1/2 teaspoon Ground Chilli
1/2 teaspoon Ground Paprika
1/2 teaspoon Ground Cumin
1/2 teaspoon Ground Coriander Seeds
1 teaspoon Dried Oregano

  1. Combine all the Spice Mix ingredients, sprinkle it over Chicken Fillets, coat them all over, and set aside for 15 minutes.
  2. Cook Chicken Fillets on a hot grill pan or frying pan.
  3. For Tacos, cut them into strips and serve with Tortillas and fresh Vegetables such as Lettuce, Red Onion, Capsicum, Tomatoes, Avocado, Cucumber, Pickled Jalapeño, etc.
