
I had leftover 1 Egg Yolk today. I wanted to eat something custardy, such as Creme Brûlée OR Creme Caramel. So, I decided to make this custard. I mixed all ingredients and microwaved it. It took less than 5 minutes to make it. Once it is cooled down, the custard was firm. I enjoyed it with Maple Syrup. This custard is perfect as filling for buns and ‘Dorayaki’. You need to reduce the amount of Flour if you like softer custard.

Ingredients
1 Egg Yolk
1/2 cup Milk
1 tablespoon (15ml) Caster Sugar *add extra for sweeter custard
1 tablespoon (15ml) Plain Flour
1-2 drops Vanilla Extract
Method
- Place all ingredients in a heat-proof bowl, and use a small whisk to mix until smooth.
- Heat in the microwave at a medium power, 500 to 600W recommended, for 1 minute. Whisk well and heat for 1 minute again. Whisk well and heat until cooked. Whisk well until smooth.
- *Note: I poured the Custard into a glass and left it in the fridge until chilled, then added some Maple Syrup.

I take of of my Mom who has advanced Alzheimer’s and she only has her sweet taste buds left, and I’m constantly trying to find things easy for her to eat.So my questions are: Can you add fruit fresh or canned to the custard? If so how would you do it?

Hi Dabbie. If I add fruit, I would choose soft fruit such as Peach or stewed Apple. Canned fruit are good, but drain well. And I would add the fruit to the cooked custard. When I was a little girl, my mother sometimes served me stewed Apple pieces covered with still soft and warm custard. I hope your mum will enjoy the treat you cook for her.
