I made my Instant Mug Cake replacing Butter with Cream Cheese and it turned out dry bread-like. I tried again and this time I reduced the amount of Flour and increased Cream Cheese. I was expecting this Mug Cake would taste like Cheese Cake, but the Cream Cheese flavour was not strong. Maybe, it’s because I ate it while the Mug Cake was very hot. I should have waited until it cooled, but I couldn’t wait.
1 Serving *I used 380ml mug
60g Cream Cheese *about 1/4 of a block
2 tablespoons Sugar
1 teaspoon Lemon Juice
2 to 3 tablespoons Self-Raising Flour
- Place Cream Cheese in a mug, microwave for 15-20 seconds OR until warm. Add Sugar and Lemon Juice, and mix well.
- Add Egg and mix well, then add Flour and mix well until smooth.
- Microwave for 1 to 1 & 1/2 minutes OR until cooked. It swells a lot, but it will shrink. If you add more Flour, it shrinks less.
- Enjoy with Lemon Curd, Fruit Jam OR Berry Sauce, etc. *Note: Try not to over-cook it as the cake turns hard.
