I recently discovered an American dessert called ‘Banana Foster’. There are variations and one of them is ‘Peach Foster’. Again, the American recipes scared me because of the amount of Butter and Sugar they use. This is my version. It is very similar to my family’s ‘Hot Fruit Salad’. This dessert is absolutely sweet enough for me.

2 Servings

Ingredients

2 to 3 Ripe Peaches *DO NOT peel, cut into wedges
20 to 30g Butter
2 tablespoons Brown Sugar *alter the amount to suit your taste
1/4 teaspoon Ground Cinnamon *add more if you like
1 tablespoon Rum OR Brandy *optional
Roasted Almonds to serve *coarsely chopped OR broken
Vanilla Ice Cream to serve

Method
  1. Heat Butter, Brown Sugar and Cinnamon in a frying pan over medium heat, stirring occasionally.
  2. When Brown Sugar has dissolved, and Rum (OR Brandy) and Peach wedges, and stir until Peach wedges are slightly caramelised.
  3. Enjoy with Vanilla Ice Cream and crunchy Roasted Almonds. *Note: These delicious Peaches can be a great topping for Pancakes.
