This is a very simple dish of fried Shiitake. My mother used to grill them, but I deep-fry them. Of course you can shallow-fry them using a frying pan. I like adding more flavours to Ponzu, but they are all optional. You can use Ponzu only.

Ingredients

200g Shiitake Mushrooms
Oil for cooking

Ponzu Dressing
2 tablespoons Ponzu
*OR 1 tablespoon Soy Sauce, 1/2 tablespoon Rice Vinegar & 1/2 tablespoon Lemon Juice
1/2 clove Garlic *finely chopped, optional
1/2 Chilli *thinly sliced, optional
1/2 Spring Onion *finely chopped, optional

Method
  1. Combine all the Ponzu Dressing ingredients in a bowl. *Note: Vegetables are optional. You can use Ponzu only.
  2. Clean Shiitake Mushrooms, cut into the size that is easy to eat if large.
  3. Deep-fry or shallow-fry Shiitake. The easiest method is probably shallow-fry in a frying pan. Heat a generous amount of Oil in a frying pan, cook Shiitake Mushrooms over medium heat until both sides are nicely browned.
  4. Add to the Ponzu Dressing and mix to combine. Add extra Ponzu if you like stronger flavour.
