I am going to share a simple but very versatile ‘Spring Onion & Garlic Sauce’. To make the sauce, you need five ingredients that are Spring Onion, Garlic, Sesame Oil, Salt and White Pepper. Depending on the dish you use the sauce for, you can add Vinegar, Lemon/Lime Juice, Sesame Seeds, Soy Sauce or Chilli to create more flavours. Today I used this sauce for seasoning the fried rice.

Spring Onion & Garlic Sauce

Spring Onion 2 *finely chopped
Garlic 1 clove *grated
Sesame Oil 1 to 2 teaspoons
Salt 1/2 teaspoon
White Pepper 1/2 teaspoon
Soy Sauce 1 to 2 teaspoons
*Note: You may wish to add 1/2 teaspoon ‘Asian Chicken Bouillon Powder’. If you do, reduce the amount of Salt and Soy Sauce.

Fried Rice Ingredients

Cooked Rice 2 servings *about 360g, warmed
Pork 150 to 200g *thinly sliced, OR use minced pork
Eggs 2 *lightly whisked
Oil for cooking

Method
  1. Mix all the sauce ingredients in a small bowl.
  2. Add small mount of Oil to the heated frying pan or wok over medium high heat, cook thinly sliced Pork until nicely browned. Transfer to a plate.
  3. Add extra 1 tablespoon Oil, cook Eggs and warmed Cooked Rice, return the cooked Pork, and stir-fry for a few minutes. Add the sauce and mix well to combine.
