This ‘Prawn & Egg Fried Rice’ is not a particularly special dish, but I like lettuce leaves in it. Many people do not cook lettuce. Why don’t you try cooking lettuce? The crispy lettuce adds a fantastic texture to the fried rice. Cos lettuce or Iceberg lettuce are recommended.

100g Prawns
1/2 tablespoon Oil
Salt & Pepper
2 Eggs *lightly whisked
1 tablespoon Oil
2 servings Cooked Rice *about 360g, warmed
2 to 3 Spring Onions *finely chopped
1/2 teaspoon Salt
1 teaspoon Soy Sauce
2 Lettuce Leaves *torn into small pieces

  1. Add a small amount of Oil to the heated frying pan or wok over medium high heat, cook Prawns until cooked through. Season with Salt & Pepper and transfer to a plate.
  2. Add extra 1 tablespoon Oil, cook Eggs, add warmed Cooked Rice and Spring Onion, and return the cooked Prawns, and stir-fry for a few minutes. Season with Salt and Soy Sauce, then add Lettuce. Mix well to combine.
