I had just 1 stalk of Rhubarb and wondered what I could make with it. I thought it would be enough for a mug cake. Then I sliced it and added to my ‘Instant Mug Cake’ with 1 pinch Salt. It was a bit sour. I could have added more Sugar, but I enjoyed it with ‘Rhubarb Sauce’ and Cream. I took 5 minutes for me to make it.


Makes

1 Serving *I used 380ml mug

Ingredients

1 tablespoon Butter *1 tablespoon is 15ml
2 tablespoons Caster Sugar
1 pinch Salt
1 Egg *OR 2 tablespoons Milk
*Note: Mug Cake made with Egg has superior texture, but Milk can be used.
4 tablespoons (1/4 cup) Self-Raising Flour
1/4 cupful sliced Rhubarb
Rhubarb Sauce OR Jam to serve
Thickened Cream to serve

Method
  1. Place Butter in a mug, microwave for 20-30 seconds OR until Butter melts.
  2. Add Sugar and Salt, mix well, add Egg, and mix well. Add Self-Raising Flour and mix until smooth.
  3. Add sliced Rhubarb, mix to combine, and microwave for 1 to 1 & 1/2 minutes OR until cooked. *Note: Try not to over-cook it as the cake turns very dry. I used 1000W microwave and 1 & 1/2 minutes was a little too long.

  4. Enjoy with some Rhubarb Sauce OR Jam. I added some Thickened Cream as well.
