Rocket_Rice

This is what my mother used to make with Daikon leaves. She used to pickle a large barrelful of Daikon to make ‘Takuan’. She didn’t waste the Daikon leaves. She pickled the leaves as well. She used just salt for leaves. The salty pickled Daikon leaves were still bitter & peppery. She often cut them into small pieces and mixed with freshly cooked rice. I don’t have Daikon leaves but I have plenty of Rocket leaves growing in my garden. This ‘Rocket Rice’ tastes quite similar to my mother’s pickled daikon leaves rice.

Ingredients

Rice 2 cups *180ml cup
Rocket 2 to 3 good handfuls
Salt
Nori, Toasted Sesame Seeds & Soy Sauce

Method
  1. Cook Rice as normal.
  2. Wash Rocket well and cut about 1cm. Add good amount of Salt (about 1 teaspoon) and gave a massage and set aside.
  3. Squeeze Rocket to remove excess salty water and mix with freshly cooked rice.
  4. Sprinkle some shredded Nori and Toasted Sesame Seeds, and drizzle some soy sauce to serve.
