My son doesn’t like to eat fish that have bones. Even the filleted Sardines still have fine bones and he is reluctant to eat them. When he was very young, he got a fish bone stuck in the throat for three days. When it finally came out, we were all shocked at the size of the bone. It must have been painful for him. Anyway, to let him eat nutritious Sardines without worrying, this is one recipe.

4 Servings

Fresh Sardine Fillets 6 to 8
Ginger 1 small piece *grated
Spring Onion 1 to 2 *finely chopped
Sake 1 teaspoon
Egg White 1
Potato Starch 1 tablespoon
Salt a pinch

  1. Place all ingredients in food processor and process until well combined and turned into coarse paste. *Alternatively chop up the sardines on a chopping board, add other ingredients and keep chopping and mixing until turned into coarse paste.
  2. When you make Clear Soup or Miso Soup, drop the sardine mixture into boiling dashi stock after vegetable are almost cooked.
