Pan-fried Sausage and Egg, you may wish to eat it with toasted Bread OR fried Potato. It is actually nice with Rice, too. You can enjoy this Rice Bowl with any sauce you like, but I have found Curry Sauce is the best. You don’t want to cook Curry Sauce just for this dish. Try Instant Curry Sauce. If you have Japanese Curry Roux Block, it is super quick and easy.

Ingredients

1 to 2 Smoked Sausages *about 80g, I used a Kransky Sausage, sliced
1 teaspoon Oil
1 Spring Onion *diagonally sliced
1 large Egg
Salt & White Pepper
1 serving warm Cooked Rice
‘Curry Sauce’ OR leftover Curry *OR try Instant Curry Sauce, read ‘Method 3’

Instant Curry Sauce
10g Japanese Curry Roux Block *thinly sliced
3 tablespoons Hot Water *plus extra

Method
  1. Whisk Egg and lightly season with Salt & White Pepper.
  2. Heat Oil in a small frying pan over medium heat, cook Sausage slices until nicely browned. Add Spring Onion and stir. Pour the whisked Egg over and gently stir. When Egg is softly cooked, it is done.
  3. To make Instant Curry Sauce, place thinly sliced Curry Roux Block and Hot Water in a small heat-proof bowl. Heat in the microwave and bring to the boil, then stir well. Add extra Hot Water if the sauce is too thick.
  4. Half fill a bowl with warm Cooked Rice and cover it with Sausage and Egg mixture, drizzle with the Curry Sauce, and enjoy.
