‘Clafoutis’ is one of the desserts that I often make. It is absolutely easy and delicious. I use a variety of Fruit, but often use Cherries OR Ripe Pears. The other day, I came across a ‘Savoury Clafoutis’ that looked like a quiche. That inspired me to make this ‘Savoury Clafoutis with Mushrooms’. Same as sweet ‘Clafoutis’, it is absolutely easy to make.


Makes

4 Servings *I used 22.5cm Pie Dish

Ingredients

400g Mushrooms *Today I used Cup Mushrooms and Pearl Oyster Mushrooms
20g Butter *plus extra for greasing
1 clove Garlic *finely chopped
Salt & Pepper
Thyme *OR other Herb of your choice

Batter
2 Eggs
1/2 cup Thickened Cream
1/4 teaspoon Salt
Ground Pepper as required
1/4 cup Plain Flour
30g melted Butter

Method
  1. Preheat oven to 180℃. Butter a pie dish. *I used 22.5cm Pie Dish
  2. Clean Mushrooms and slice, cut into smaller pieces OR tear into smaller clusters.
  3. Melt 20g Butter in a frying pan over medium heat, cook Mushrooms. Add Garlic, stir for a few minutes, and season with Salt & Pepper. Arrange them in the prepared pie dish.
  4. Place Eggs, Cream, Salt and Pepper in a bowl, mix with a whisk, sift in Flour and mix well until smooth. Add melted Butter and combine well.
  5. Pour the mixture over the Mushrooms, sprinkle with some Thyme leaves, and bake for 30 to 40 minutes, or until golden and cooked through.
