Since I cooked ‘Scrumptious Dried Sardines & Walnuts’, I have known Walnuts and Soy Sauce are a good match. These Scrumptious Walnuts are great with cold Beer OR Green Tea. It’s a delicious and nutritious snack. The only problem is that it’s hard to stop eating them. If you prefer sweet snack, try my ‘Muscovado Coated Walnuts’. It would be even harder to stop eating them.

Makes

2 to 3 Servings

Ingredients

1 cupful (about 80g) Walnuts *roasted
1/2 tablespoons Sugar *OR 1 tablespoon for sweeter flavour
1 tablespoon Soy Sauce
1 tablespoon Mirin
1/2 teaspoon Rice Vinegar *optional but recommended
Ground Chilli OR Curry Powder

Method
  1. Walnuts need to be roasted. I use a mini toaster oven to roast them, but you can toast them using a frying pan.
  2. Place Sugar, Soy Sauce, Mirin and Rice Vinegar in a small frying pan OR saucepan, and bring to the boil over medium low heat.
  3. Add Walnuts and stir until the sauce is gone. Sprinkle with Ground Chilli OR Curry Powder (OR both) as required.
